The Fish Society

Tuna Akami refers to the lean, red meat of the tuna. It is the most common and widely consumed part of the tuna, known for its firm texture and distinct flavour. Akami is typically found in the muscular areas of the fish, such as the loin or back, and it contains a lower fat content compared to our Otoro. It is frequently used in sushi, sashimi, and other Japanese dishes where the natural taste of the tuna is the showstopper.

Each saku block is individually super-frozen at -60 degrees and stored in our state-of-the-art freezers—a technique perfected by sushi masters to lock in the memorable taste, texture, and colour of bluefin tuna. A 120g block will make 10-15 maki rolls.

The Fish Society

The Fish Society are a small company with 25 employees, based near Guildford. Guildford is forty miles from the sea and a hundred miles from the nearest fishing port, but it’s where The Fish Society's founder, Alistair Blair, lived when he started The Fish Society 25 years ago. And it’s where fish arrives every morning, despatched by 150 suppliers the day before via the UK’s very efficient fish delivery network. Fish landed and auctioned on Day 1 in Cornwall, The Hebrides, Aberdeen and Norfolk, and indeed in the big French port of Boulogne can be processed and frozen on Day 2.

Pole-and-line

This fishing method provides the most selective targeting of tuna possible, with minimal bycatch of non-target fish and marine wildlife like dolphins, turtles and sharks. Pole-and-line fishing targets schools of tuna near the ocean surface, and therefore only needs to use short lengths of line on each pole, typically  5-10m.
