Tuna Edamame Avocado Stacks

What you'll need

1 tin of Scout Tuna (either Garden Pesto or Organic Olive Oil) | |
1 ripe avocado | |
1 sheet of Nori seaweed | |
¼ cup diced cucumber | |
2 Tbs sliced green onion | |
¼ cup edamame (cooked from frozen) | |
2 Tbsp Aioli | |
Cucumber peels, nori and toasted sesame seeds or togarashi to garnish |

- In a medium bowl, Combine Scout Albacore Tuna, aioli, diced cucumber, sliced green onion, edamame, and bite size pieces of nori. Stir until gently combined.
- Slice avocado in half and remove pit. Scoop out a hole in the middle to fill.
- Fill the center of each avocado generously with tuna filling.
- Garnish with reserved cucumber and nori and liberal shakings of toasted sesame.
