Sirena Tuna Burgers

What you'll need

Sirena Tuna in Olive Oil | 425g |
Fresh or dried breadcrumbs | 75g |
Eggs | 2 |
Onion, finely chopped | 1/2 |
Spring onions | 2 |
Grated parmesan | 25g |
Fresh lemon juice | 1 tbsp |
Capers, roughly chopped | 20g |
Oregano | 1/4 tsp |
Salt and pepper | To taste |
Milk burger buns | 6 |
Red cabbage, finely sliced | 1 handful |
Rocket | 1 handful |
Chilli mayo | To taste |

Instructions
Method
- Whisk eggs with lemon juice and add breadcrumbs, parmesan and seasoning. Leave to sit for a few minutes, then add tuna, onion, spring onion and herbs, seasoning further if needed. Mix together till firm.
- Sprinkle the capers over the mixture, then shape into six medium sized patties.
- Fry patties in butter on medium heat until golden brown.
- Serve in milk buns with chilli mayo, rocket and red cabbage.
