Tamari and lemon marinated and seared bluefin tuna

Being one of the most decadent forms of tuna, bluefin is often best enjoyed in a purer form, seared with just a simple marinade. This one in particular utilises the umami of the tamari (soy sauce) and the citrus notes of the lemon to gorgeously compliment the depth of flavour that bluefin tuna brings.


What you'll need

Ingredients Quantity
Tamari (soy sauce) 2 tablespoons
Lemon juice 2 tablespoons
Sesame oil 1 tablespoon
Garlic powder 2 teaspoons
Sugar 2 teaspoons
Salt and pepper To taste
Fresh bluefin 900 grams
Olive oil For searing
Fresh cilantro, chopped Optional, to garnish
Scallions Optional, to garnish
Sesame seeds Optional, to garnish
Sriracha sauce For drizzling

Instructions

Method

1. In a bowl, whisk together the first 7 ingredients to make a marinade. Towel dry tuna steaks and place in a glass or ceramic dish. Pour marinade over the fish, turning to coat well throughout. Cover tightly and chill several hours to overnight; turn fish over at least once in the middle of marinade time.

2. Heat 3 tablespoons of olive oil in a large heavy skillet until oil is smoking. Sear bluefin steaks 1 1/2 minutes per side on high heat, taking care to flip carefully with a flat, steel spatula. (If your tuna is less than 1 1/2 inches thick, sear for only 1 minute per side.)

3. Transfer seared bluefin to a large cutting board and let rest/cool 10 minutes. Use a very sharp knife to slice thinly across the grain.

4. Serve chilled or at room temp, over your favourite salad greens. Sprinkle with sesame seeds and cilantro or green onions, if desired. Drizzle with Sriracha mayo for an added depth of flavour!
