Cakalang Pampis
Cakalang Pampis is a traditional Indonesian dish that consists of shredded, broiled Skipjack (Skipjack is known as Cakalang in Bahasa Indonesia). This specially prepared tuna is then either served with rice or used as filling for panadas to create delicious pasty-like snacks.

Skipjack (broiled as the best option or canned) | 200 grams |
Pandan Leaf, finely sliced | 1 |
Kaffir lime leaves, finely sliced | 3 |
Lemon basil leaves, finely sliced | 30 |
Dried oregano | 1 teaspoon |
Lemongrass stalks, crushed | 2 |
Thick coconut milk | 250 ml |
Long, red cayenne peppers, diced | 4 |
Birds Eye Chillies, diced | Depends on desired spice level |
Ginger, grated | 3cm long piece |
Shallots | 5 |
Garlic cloves | 2 |
Salt | 1/2 teaspoon (or to taste) |
Instructions
Method
1. In a pot bring coconut milk to a boil.
2. Add peppers, chillies, ginger, shallots, garlic cloves and salt and re-boil until bubbling.
3. Add cakalang, pandan, oregano and kaffir lime leaves. Let them cook for 10 minutes.
4. Add lemongrass and lemon basil.
5. Stir and cook until everything is dry.
6. Leave to cool if you want to use them for panada. Scoop over the warm cooked rice if you want to enjoy with rice.
