Gulha snacks (Handu gulha)

Gulha are dumpling snacks that are popular in the Maldives. They are a mixture of tuna, onion, coconut and chilli. They are mixed together with a variety of other herbs and spices before being deep fried. 

Flaky tuna is recommended for this, with the texture being preferable to soak up all those delicious flavours and keep the shape of the dumpling. 

Mix up onions, garlic, curry leaves, chillies, lemon juice, turmeric powder and salt, and any other spices you wish to add. 

Add in your tuna and grated tuna into the mix to create a thick paste which can be shaped into marble-sized balls. 

Then create a dough with flour, salt and oil until you have a dry and smooth dough. Keep adding water very gradually as you do not want to let the dough get sticky. 

Place your mixture into the middle of the dough balls and seal up. Deep fry over a medium/low heat until brown and crisp. 

Serve hot.

Coconut 100g
Curry Leaves 3
Tumeric pinch
Garlic powder pinch
Salt and Pepper pinch
Other spices of your choosing
Flour 250g
Salt (for dough) 1tsp
Oil 3 tbsp
Water 50ml
